The following healthy meal is delicious if you love curry flavor!
Grilled Salmon
Marinate salmon filet in lite soy sauce and Old Bay seasoning. Grill until just done. If you cook it too long it will be dry. Serve with curry sauce on the side.
Curry Sauce
1 or 2 Tbsp. Hellman's Olive Oil Mayo
Curry
Mix the mayonnaise and curry together. I use a good bit of curry. It is one of my favorite flavors.
Curried Sweet Potato Soufflé
Cook sweet potato in the microwave until soft. Discard peeling. Put the potato in a bowl. Add some curry, ginger, turmeric, a splash of lime juice, and coconut milk or a splash of half and half. Add a dollop of softened butter or a splash of olive oil. Mix together until smooth. Serve like mashed potatoes. You may prefer to add a little sugar or agave but I like it as is. This is a recipe that my friend, Lisa, cooked up. So easy!
Corn on the Cob
Rub the ears of corn with butter then roll in a mixture of chili powder, cumin, salt and pepper. Drizzle a little lime juice over then wrap the ears in foil and roast on the grill.
Salad Dressing
A few tablespoons balsamic vinegar
A splash or two of olive oil
A splash of lime juice
A pinch of garam masala
Curry
Teaspoon of mustard
Whisk the olive oil and mustard together. Slowly add the balsamic vinegar a bit at a time and whisk until smooth. Add the spices and whisk until mixed well. Pour over salad greens.
